Today we had a total cooking day. All those things I’ve been telling you about the last few weeks? We did it all in one day!

We started off the day with pumpkin pancakes. My daughter wanted me to show her how to make them – so she actually did half of it. They turned out delicious!

Then, she wanted to process pumpkin to take home. We roasted, cleaned, pureed, and packaged 12 cups for her to take home.

Then we cleaned the seeds and toasted those.

Since it was near 80 degrees today – we were able to get outside for a couple of hours while the roasting and toasting were going on. There was no going in the lake though. The water is already too cold. The dog didn’t mind! He was in the water a lot.

Then we made Chicken with Zucchini and Tomatoes for dinner.

I have to tell you, my daughter is a sloppy cook! There was pumpkin everywhere! I had to scrub the walls. UGH!

After she left, I processed the rest of the Zucchini and got it in the freezer, and popped in a loaf of pumpkin bread.

I never would have expected this from my daughter. I made sure she knew how to cook, but she never really seemed to take much of an interest in it. She would help make dinner sometimes, and she was proud of herself when she made something good. But now she’s making things like Chicken Alfredo with broccoli and tomatoes, and meat loaf and mashed potatoes, and I forget what else she said she made this week.

I am totally astounded. Goes to show you – they take in a lot more than you think they do.

I’m just waiting on the pumpkin bread so I can go pass out…
