zucchini tomatoes2

 

½ to ¾ lbs. chicken tenders, or diced, or shredded chicken breast

1 medium zucchini

1 small can diced tomatoes

1 clove garlic, mince

1 cup rice

 

Coat pan with butter or olive or coconut oil. Saute garlic about 1 minute.

Add chicken tenders and cook about 5 minutes.

Meanwhile, Prepare rice according to package directions.

Slice zucchini into 1/4 inch slices, then quarter.

Put enough soy sauce in the bottom of a medium sauté pan to coat the bottom. Stir in zucchini until covered and just heated through. Do not overcook.

Add tomatoes with the juice. Heat thoroughly.

To Serve: Place bed of rice on plate. Top with chicken tenders.

Top with zucchini and tomato mixture.

Realistically serves 3
