I was marveling at the beautiful peppers this week at the grocery store. That is why they are the superfood of the week. And of course, that means its time to make stuffed peppers.

We do ours a little different.

Try these variations –

    Thanks Carole for the stuffed pepper recipes. We like stuffed peppers, and prefer the coloured ones, like the red, yellow and orange ones, which taste so much sweeter and nicer than the green ones. The green ones are surprisingly very popular in this country, but I don’t like them at all, as I find them quite bitter.
    We had a salad last night with kidney beans, red, yellow and orange ones, mixed with corn and celery. Yum!
