Its shaping up to be a long work week – but through it all, you can find little things that make you happy.

I made a beautiful burger from lean ground beef, seasoned with garlic and spicy steak seasoning – topped with cheese, barbecue sauce, mustard, relish, lettuce tomato, and onion and served on a fresh kaiser roll. In hte 10 minutes that it took the burger to cook, I made a big salad with spinach, broccoli, tomato, onion, some grated cheese. Because I’m eating later these days, I like to top dinner off with a little fruit to satisfy my sweet tooth.

Then its time to have a fresh cup of coffee and watch the sunset over the lake and thinking about how grateful I am to be living here before getting back to work.  

Yes, now its my time to work on Rebel With a Fork. No rest for the wicked dontcha know 😉
