
Fresh baked pumpkin bread…
Yeah, its time to start making all things pumpkin, and this is the best pumpkin bread you’ve ever tasted.
This recipe for pumpkin bread is easy, and it can bake while you do something else. Mine is baking right now.
Pumpkin Bread
1 loaf –
1 cup pumpkin
2 eggs
1/2 cup oil
1/3 cup orange juice
1 3/4 cups flour
1 1/2 cups sugar
1 teaspoons baking soda
1/4 teaspoon salt
2 teaspoons pumpkin pie spice (1 teaspoon cinnamon, 1/3 teaspoon allspice, 1/3 teaspoon nutmeg, 1/3 teaspoon ginger)
Preheat oven to 350 (F).
In a large bowl, mix pumpkin, eggs, oil, and juice until well blended.
In another bowl, mix flour, sugar, baking soda, salt, and pumpkin pie spice.
Slowly add the flour mixture to the pumpkin mixture. Mix until smooth.
Pour into well greased loaf pan – (9×5 or 8×5)
Bake at 350 for one hour or until bread tests done. If you use fresh pumpkin, it seems to take 10 minutes or so longer. Just keep an eye on it until its done, but not overdone.
Cool on racks.
(do not try to cut into it before it cools. It will fall apart!)
You can make 2 loaves. You’ll need them, believe me!
