Nothing says summer like orange cream. Remember Creamsicles? Well, August 14 is national creamsicle day. Here is a recipe for an orange creamy cheesecake that is perfect for summer… 1 vanilla cookie crust
1 8oz. package cream cheese, softened
1/3 cup sugar
2 large oranges
1 cup whipped cream, already whipped
Beat cream cheese and sugar until smooth.
Zest and juice 1 orange. Mix 1/2 cup orange juice and 2 teaspoons zest into the cream cheese.
Fold in whipped cream.
Chill for at least 4 hours.
Just before serving, segment the other orange and garnish the pie prettily. Or you can drain a small can of mandarin oranges.
To be perfectly honest, I don’t even bother with oranges on top.
