Salmon With Brown Sugar & Ginger Glaze

I made this the other night, and my Daughter wanted me to post this as the recipe of the week for you –

4 (6-8 ounce) fresh salmon fillets

salt and fresh ground black pepper to taste

4 tablespoons and 2 teaspoons cold water

4 tablespoons rice vinegar

2 tablespoon brown sugar

2 teaspoons chile powder

2 teaspoons finely grated fresh ginger

2 cloves garlic, minced

1 teaspoon soy sauce

4 tablespoons chopped fresh basil

Preheat broiler (or grill for medium heat and lightly oil the grate)

Season salmon fillets with sea salt.

Place salmon, skin side up, into the broiler or on the preheated grill; cook salmon for 4 to 8 minutes per side – depending on thickness, or until the fish flakes easily with a fork.

Meanwhile, combine the rest of the ingredients in a small saucepan over medium heat.

Bring mixture to a boil, reduce heat to medium and simmer until barely thickened, about 2 minutes.

Sprinkle basil on top of salmon; spoon glaze over basil.

I served it with buttered noodles and a tossed salad.
