Here’s a great winter broccoli recipe. They will eat their vegetables! Surprise your family with this truly unusual dish.

1 egg white

¼ cup mayonnaise

3 Tablespoons grated Parmesan cheese

2 Table spoons chopped parsley

Grated peel of ½ lemon

2 lbs. fresh, or 2 –10 oz. packages broccoli spears, cooked crisptender

2 Tablespoons melted butter

In a small bowl, beat egg white until soft peaks form.

Fold in Mayonnaise.

Stir in cheese, parsley and lemon peel.

Arrange cooked broccoli in baking dish.

Pour melted butter over broccoli.

Top with egg white mixture.

Bake at 450°F for 5 minutes, or until puffy and lightly browned.
