Healthy, quick and delicious-
4 fish fillets
2 Tablespoons olive oil
1/4 cup chopped onion
1 clove garlic, minced
2 teaspoons olive oil
1 cup diced zucchini
1/2 cup sliced fresh mushrooms
1/2 teaspoon dried oregano
1/4 teaspoon basil
1 8-oz. can tomato sauce
1 tablespoon tomato paste
Parmesan cheese
Heat 2 teaspoons olive oil. Sauté onion and garlic until tender, about 2 minutes.
Add zucchini, mushrooms, oregano and basil. Cook stirring frequently for about 3 minutes, or until tender. Stir in tomato sauce and paste
Simmer for about 10 minutes.
Meanwhile, in another skillet, heat 2 tablespoons olive oil in skillet over medium heat. Brown fish on both sides, about 2 minutes per side. Reduce heat to low, cover, and continue cooking until done through – about 5 minutes.
Serve tomato mixture over fish. Top with Parmesan cheese if desired. Can be served over pasta.
Add a great tossed salad and some french bread slices with olive oil and parmesan for dipping for a great meal.
