This used to be a very popular salad in high end restaurants.
Some people like sweeter apples, some like tart apples. Some use a combination of the two. Use your favorites.
3 firm ripe apples
1 Tablespoon lemon juice
1 cup sliced celery
Â½ cup coarsely chopped walnuts
Â½ cup mayonnaise
Â¼ cup raisins (optional)
Core and slice the apples into bite-sized pieces. Peeling is optional.
Put in a bowl and toss with lemon juice to coat.
Add celery, walnuts, and raisins. Cover and chill.
Before serving, add mayonnaise to apple mixture and toss to coat.
Serve on a bed of lettuce.
