Updated Mom’s Ground Beef Casserole

I had to laugh when I saw this recipe. My mom used to make something like this. Did yours?

This one’s updated and has that Mexican twist that we’ve all come to love.

 

1 lb. Lean ground beef

1 medium onion, chopped

1 cup salsa

1 can Mexican style corn, drained

2 cans (14.5 oz) Diced Tomatoes in Sauce (or 1 can diced tomatoes & 1 can tomato sauce)

1 cup rice – cooked

1 can peas, drained

1 cup grated sharp cheddar cheese

 

Brown beef and onions until beef is no longer pink. Drain.

Add remaining ingredients, Except Peas.

Bring to a boil. Cook 2 minutes.

Add peas.

Top with cheese.

Cover and remove from heat. Let stand 5 minutes, and serve.

6-8 servings

Great with cornbread!
