Tropical Breakfast Wraps

6 eggs

¼ cup chopped ham

¼ cup chopped red or green bell pepper

2 Tablespoons butter

1 8oz. can crushed pineapple, drained

4 8in. flour tortillas

Grated cheddar cheese

 

Beat eggs in a medium bowl until light and creamy looking

Melt butter in a large fry pan and swirl to coat pan

Quickly stir fry ham and bell pepper until ham is lightly browned and vegetables are crisp-tender

Stir in eggs and pineapple

Scramble and cook until eggs are done

Turn off heat

Place cheese on top of eggs, cover and let sit a few minutes to let cheese melt

Divide eggs between the 4 tortillas

Roll and eat
