1 20-ounce can pineapple chunks in syrup
½ cup packed brown sugar
½ cup vinegar
2 teaspoons soy sauce
1 clove garlic, finely chopped
2 Tablespoons corn starch
2 tablespoons cold water
Drain pineapple and reserve syrup.
Add enough water to syrup to make 1 cup.
Mix 2 tablespoons corn starch and 2 tablespoons water until smooth.
Heat syrup mixture, brown sugar, vinegar, soy sauce and garlic to boiling.
Add cornstarch mixture and heat to boiling stirring constantly.
Boil and stir 1 minute. Stir in pineapple.
What to do with this sauce?
Sweet and Sour Chicken or Pork – Add chicken or pork chunks, cubed tomatoes, and green pepper cubes. Serve over white rice.
or
Add meatballs for sweet and sour meatballs. or
Omit pineapple and serve with egg rolls or fried wonton.
I like just the sauce with pineapple over rice.
