A great mix of fall flavors!
2 large sweet potatoes
1 cup diced apple
1/3 cup chopped walnuts
2 tablespoons lemon juice
2 tablespoons sugar
2 tablespoons low fat mayonnaise
Cut sweet potatoes into 1 inch chunks.
Place in a large pot and cover with water. Boil until tender, but not mushy.
While potatoes are boiling, mix lemon juice, sugar and mayo. Stir in apple and walnuts. Set aside.
When potatoes are drained and cooled, gently mix in the apple mixture.
Serve immediately. (I don’t like it refrigerated – but you might)
