Sweet and Sour Pork Chops with Simple Vegetable Kabobs

4 pork chops, about ½ inch thick

½ cup KC Masterpiece Barbecue Sauce (works the best with this recipe)

2 Tablespoons lime juice

2 Tablespoons honey

 

Preheat grill to medium

Place 4 pork chops in a shallow dish. Sprinkle both sides with garlic powder.

In a small bowl, whisk together barbecue sauce, lime juice, and honey.

Grill chops 10-15 minutes, or until done.

Brush each side during the last 5 minutes of cooking.

 

Simple Vegetable Kabobs-

4 small red potatoes, quartered,

2 Medium Zucchini cut into 2 inch pieces,

8 cherry tomatoes, and

1 red onion cut into 1 inch pieces

 

Par boil potatoes until just starting to get soft. Drain and quarter.

Place vegetables on skewers. If using bamboo, be sure to soak for 30 minutes before using.

Brush Kabobs with olive oil and season with salt & pepper.

Grill for 9 – 10 minutes or until golden brown and vegetables are crisp-tender.

 

Serves 4 normal eaters.
