2 chicken breast halves cooked and cut into 1 inch cubes.
1 medium tomato cut into 1 inch cubes
1 small green pepper cut into 1 inch cubes
Sweet And Sour Sauce –
1 20-ounce can pineapple chunks in syrup
½ cup packed brown sugar
½ cup vinegar
2 teaspoons soy sauce
1 clove garlic, finely chopped
2 Tablespoons corn starch
2 tablespoons cold water
Drain pineapple and reserve syrup.
Add enough water to syrup to make 1 cup.
In a separate cup – mix 2 tablespoons corn starch and 2 tablespoons water until smooth. Set aside.
Cook chicken and cut up all ingredients.
Prepare 2 cups white rice per package directions.
Heat syrup mixture, brown sugar, vinegar, soy sauce and garlic to boiling.
Add cornstarch mixture and heat to boiling stirring constantly.
Boil and stir 1 minute. Stir in green pepper and cook 1 minute over medium heat.
Stir in chicken, tomato, and pineapple and heat through.
Serve over rice.
