4 cups chopped romaine lettuce
1 Â½ cups chopped tomato
1 cup whole wheat or multi-grain rotini pasta, cooked and drained
Â¾ cup Colby and Monterey Jack Cheese cubes
1 cup chopped cucumber â€“ skins on
1 cup ham cubes (or turkey, or chicken, or a mix…)
Â½ cup thin onion rings – cut in half
Â½ cup crumbled bacon
Â¼ cup Italian dressing
Put all of the ingredients in a very large bowl.
Drizzle with dressing
Toss and serve
Makes 4 â€“ 2 cup servings
This salad is so hearty, it could be a main course too.
