4 cups chopped romaine lettuce
1 ½ cups chopped tomato
1 cup whole wheat or multi-grain rotini pasta, cooked and drained
¾ cup Colby and Monterey Jack Cheese cubes
1 cup chopped cucumber – skins on
1 cup ham cubes (or turkey, or chicken, or a mix…)
½ cup thin onion rings – cut in half
½ cup crumbled bacon
¼ cup Italian dressing
Put all of the ingredients in a very large bowl.
Drizzle with dressing
Toss and serve
Makes 4 – 2 cup servings
This salad is so hearty, it could be a main course too.
