Springtime Turkey & Pear Salad

1 –12 oz. bottle vinaigrette dressing

1 red pear, cored and diced

1 bag of your favorite style salad mix. Spinach or Spring mix works nicely.

1 lb. oven roasted turkey breast, or cooked chicken breast cut into strips

1 –6 oz. bag honey roasted sliced almonds

1 cup dried cranberries, or fresh strawberry slices

1/3 cup crumbed Gorgonzola or blue cheese, or grated mozzarella

Walnuts, chopped

(optional)

1 small orange squash, julienne-cut

 

In small bowl, combine dressing and pears. Set aside.

Divide salad mix between 4 plates.

Top each with turkey, almonds, cranberries, and cheese.

Top with pears.

Drizzle with pear-vinaigrette dressing.

Garnish with squash strips.

Makes 4 salads
