Spicy Sweet Potato Planks

2 medium sweet potatoes cut into wedges (uniform sized)
2 tablespoons olive or canola oil
2 Tablespoons brown sugar
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Par boil potato wedges for 10 minutes. Drain. Potatoes should still be very firm.

Place dry ingredients in a large resealable plastic bag. Shake to mix.

In a large bowl, toss potato wedges and oil.

Add potato wedges to plastic bag, shake to coat.

Place wedges on a greased baking dish.

Bake at 440 F for 20-25 minutes or until potatoes are tender. Turn wedges halfway through cooking.

Makes 4 serviings.
