2 Tablespoons olive oil
4 boneless, skinless chicken breasts
1 medium onion, chopped
3 cloves garlic, minced
2 cups sliced fresh mushrooms
1 10 oz can diced tomatoes and green chilies
ΒΌ cup shredded cheddar or mozzarella cheese
In skillet, cook chicken in oil until browned nicely.
Add onion and garlic. Saute’ until tender, about 5 minutes.
Add mushrooms and tomatoes.
Reduce heat. Cover and simmer about 20 – 25 minutes, stirring occasionally.
Sprinkle with cheese. Cover and heat until cheese melts.
Serve over rice.
