Sante fe Chicken Skillet


This is one of my newest creations and its now on our favorite go-to list!

This is a hearty fast dinner! And its one way to make a large chicken breast feed 4.


1 large or 2 medium chicken breasts

1 tablespoon coconut or olive oil

1 cup Basic Salsa

1 can black beans drained and rinsed

¼ cup diced onion

1 cup rice, cooked

1 cup shredded cheddar cheese

¼ teas. fresh ground black pepper

1/4 teas. salt


2 cups small broccoli florets

1 cup corn


Instructions –

Heat oil in large skillet.

Season chicken generously with garlic powder. Cook chicken until just done. Remove from pan.

Stir in salsa, beans, and onions. Let simmer.

Cut chicken into chunks or shred. Add back to pan.

Add rice to pan.

This would be the time to add broccoli or corn if using.

Cover and simmer for about 5 minutes.

Remove from heat and add in cheese. Stir gently until blended and cheese is melted.

You can serve it in bowls, or on tortillas. Cool melon chunkcs are a great go-with.

Makes 4 servings.
