Salsa Cruda

4 medium tomatoes

½ cup finely chopped onion

½ cup finely chopped celery

¼ cup finely chopped green bell pepper

¼ cup olive oil

2 to 3 Tablespoons finely chopped canned green chili peppers

2 Tablespoons red wine vinegar

1 teaspoon mustard seed

1 teaspoon coriander seed, crushed

salt and pepper to taste

 

Peel tomatoes, dip into boiling water for 30 seconds, then plunge into cold water. Skin will come off easily.

Chop tomatoes.

Mix in remaining ingredients.

Chill several hours or overnight to blend flavors.

Makes about 3 cups.
