4 medium tomatoes
Â½ cup finely chopped onion
Â½ cup finely chopped celery
Â¼ cup finely chopped green bell pepper
Â¼ cup olive oil
2 to 3 Tablespoons finely chopped canned green chili peppers
2 Tablespoons red wine vinegar
1 teaspoon mustard seed
1 teaspoon coriander seed, crushed
salt and pepper to taste
Peel tomatoes, dip into boiling water for 30 seconds, then plunge into cold water. Skin will come off easily.
Mix in remaining ingredients.
Chill several hours or overnight to blend flavors.
Makes about 3 cups.
