Salsa Chicken Skillet Dinner

This is one of my newest creations, and it has been moved to the favorite go-to list!

This is a hearty fast dinner! And its one way to make a large chicken breast feed 4.

1 large or 2 medium chicken breasts

1 tablespoon coconut or olive oil

1 cup Salsa

1 can black beans drained and rinsed

¼ cup diced onions

1 cup rice, cooked

1 cup shredded cheddar cheese

¼ teas. fresh ground black pepper

1/4 teas. salt

Optional

2 cups small broccoli florets

1 cup corn

Instructions –

Heat oil in large skillet.

Cook chicken until just done. Remove from pan.

Stir in Salsa, beans, and onions. Let simmer.

Cut chicken into chunks. Add back to pan.

Add rice to pan.

This would be the time to add broccoli or corn if using.

Cover and simmer for about 5 minutes.

Turn off heat and add in cheese. Stir gently until blended and cheese is melted.

You can either serve in bowls, or on tortillas.

Makes 4 servings.

Cool melon chunks are a nice go-with.
