Roasted Pumpkin

Clean out seeds and stringy pulp using a spoon

Use a sharp knife to cut off skin. I find this easier to do if I cut the pumpkin into wedges first.

You can either leave as wedges, or cut into cubes

Lightly sprinkle with salt, pepper, and olive oil

Roast in a 400 F. oven for 30 minutes, or until pumpkin is tender.

Pumpkin cubes can be used in any dish that calls for winter squash.
