2 large red bell peppers, seeded and cut into eighths
1 large yellow bell pepper, seeded and cut into eighths
3 Tablespoons lite soy sauce
2 Tablespoons balsamic vinegar
2 Tablespoons olive oil
1 Tablespoon finely chopped fresh oregano leaves
1 large clove garlic, pressed
Â¼ cup crumbled feta cheese (optional)
Arrange peppers, skin side up in a single layer on rack of broiler pan.
Broil 6 â€“ 8 minutes or until skin is blackened.
Turn peppers over, cook 5 minutes longer.
Remove from broiler. Let stand 5 minutes
Meanwhile, whisk together soy sauce, vinegar, oil, oregano and garlic in medium bowl.
Remove skin from peppers.
Add peppers to soy sauce mixture, stirring to coat well. Marinate 10 minutes, stirring occasionally.
Arrange peppers on serving plate.
Sprinkle with Feta cheese if desired. Or grated mozeralla works too. Or no cheese 😉
