8 oz. light ricotta cheese
2 Tbs. orange liqueur
½ tsp. finely shredded orange peel
1 ½ cup berries – your choice
1 tsp. lemon juice
½ to 1 tsp. sugar, – or 2 tsp. honey
Whisk together cheese, 1 Tbs. orange liqueur, and orange peel.
Cover and chill for at least one hour, or overnight.
In a medium bowl – combine berries, lemon juice, and 1 Tbs. liqueur. Cover and let stand for 15 minutes.
To serve, place a layer of fruit, a layer of cheese mixture, repeat.
Sprinkle with sugar or honey if desired.
You can play with this recipe. I want to try using Amaretto instead of the orange liqueur. I’ve used cream cheese instead of ricotta. Ricotta is better.
You can use any berries you like, or even cherries.
Or I wonder how it would be with pineapple and coconut?
You can top with granola or Grape Nuts cereal or no topping.
