A trendy sandwich or burger topping is cool, crunchy pickled cabbage or onions.
Here’s how to make it at home. It just needs a couple of hours to ferment.
2 cups thinly sliced red onion, or red cabbage, or yellow onion, or cabbage
1 cup white wine or rice vinegar
2 tablespoons sugar
1 tablespoon salt
Put vegetables in a heat proof dish.
Heat vinegar, sugar and salt just to boiling.
Mix until dissolved.
Pour over vegetables.
Cool.
Refrigerate at least 2 hours.
You can add a little crushed red pepper if you want to spice it up a bit.
