Quick Chinese Grilled Chicken


2 Tablespoons soy sauce

2 Tablespoons fresh lemon juice

2 Tablespoons curry powder

1 Tablespoon packed brown sugar

1 Tablespoon vegetable oil

½ teaspoon cumin

¼ teaspoon Chinese five-spice powder

1 pound chicken tenders, or boneless skinless chicken cut into ½ inch strips.


Combine all ingredients except chicken. Mix well.

Add chicken and stir to coat well. Let stand 10 minutes.

Remove chicken from marinade. Pour marinade into small saucepan.

Cook chicken in skillet or on grill pan until cooked through, about 2 minutes per side.

Meanwhile, place marinade over medium heat and bring to a simmer.

Place chicken on plate and pour sauce over.

Makes 4 servings.
