This is a faster version of the Puffy Apple Pancake. It’s OK. Not as good as the real thing – but nothing ever is…
2 medium apples
3 Tablespoons butter
2 Tablespoons sugar
1 teaspoon cinnamon
1 cup Bisquick
2/3 cup milk
1 egg
1 Tablespoon sugar
Core apples. Cut each into 8 slices.
Melt butter in 9 inch oven proof skillet. Stir in cinnamon, 2 tablespoons sugar, and apple slices. Sautè until tender, 4-5 minutes.
Combine Bisquick, milk, egg, and 1 tablespoon sugar until just moistened. Pour batter over apples.
Turn heat to low and cook 10 minutes until surface of pancake looks dull.
Place skillet under broiler for about 2 minutes until pancake is lightly browned.
To serve, turn pancake out onto a plate, apple side up.
Serve with real maple syrup.
