Not to brag but this is the best pumpkin bread! And its easy.
Be warned – it goes fast!
1 cup pumpkin
2 eggs
1/2 cup oil
1/3 cup orange juice
1 3/4 cups flour
1 1/2 cups sugar, minus 1 or 2 tablespoons to taste.
1 teaspoons baking soda
1/4 teaspoon salt
2 teaspoons pumpkin pie spice (1 teaspoon cinnamon, 1/3 teaspoon allspice, 1/3 teaspoon nutmeg, 1/3 teaspoon ginger)
Preheat oven to 350 (F).
In a large bowl, mix pumpkin, eggs, oil, and juice until well blended.
In another bowl, sift together flour, sugar, baking soda, salt, and pumpkin pie spice.
Slowly add the flour mixture to the pumpkin mixture. Beat until smooth.
Pour into well greased loaf pan – (9×5 or 8×5)
Bake at 350 for one hour or until bread tests done. If you use fresh pumpkin, it seems to take 10 minutes or so longer. Just keep an eye on it until its done.
Cool on racks.
(do not try to cut into it before it cools. It will fall apart!)

I‘ve never tried pumpkin bread, nor pumpkin pie! I will definitely try to get a pumpkin and give some of your recipes a go Carole! I’ve always loved warm spices and I’ll prepare some of your pumpkin spice blend , which will be lovely in apple crumbles, hot chocolate and spiced biscuits – ( I mean cookies!) Thank you.
