Pound Cake


1 cup butter, softened

2 cups sugar

1 8oz. package cream cheese, softened

1 teaspoon vanilla

6 eggs

2 cups flour

1 Tablespoon baking powder

1 teaspoon salt


Preheat oven to 350 F.

Grease and flour a 12 cup fluted tube pan, or a 10 inch tube pan.

In a large bowl, beat butter until creamy.

Gradually add sugar, beat until well mixed.

Beat for 5 more minutes until very light and fluffy.

Add cream cheese and vanilla, beat one more minute.

Add eggs one at a time, beat well after each.

In a separate bowl, mix flour, baking powder and salt.

Gradually add flour mix to the butter mix.

Beat one minute more or until well blended.

Pour into prepared pan.

Bake 1 hour, or until golden brown.

Cool for 10 minutes.

Gently loosen cake from the sides of the pan with a spaula.

Gently remove cake from pan.

Cool completely on a wire rack.


Favorite way to eat this is with fresh strawberries and whipped cream, but plain is good too!
