Potatoes and Pepper Steak Stir Fry

 

4 medium potatoes, sliced ¼ inch thick- and microwaved 6 minutes or until just tender.

1 lb. London Broil, thinly sliced

1 Tablespoon garlic pepper

2 Tablespoons olive oil

1 green bell pepper, cut into thin strips (or red pepper and green beans)

 

While potatoes cook, toss beef with garlic pepper.

Heat oil in large skillet. Over high heat, stir-fry meat 3 minutes.

Remove and set aside.

Add green pepper (or red pepper and green beans) to skillet. Stir fry 3 minutes.

Add potatoes to skillet. Sauté 5 minutes.

Return beef to skillet. Toss until heated through.

Serves 4
