Pepper Steak

1 ½ lbs. Steak, cut into 1 inch cubes
1 Tablespoon paprika
Fresh coarsely ground black pepper
2 cloves garlic, crushed
2 Tablespoons butter
1 cup sliced green onion with tops
2 green peppers cut into strips
2 large tomatoes cut into 1 inch dice
1 cup beef broth
¼ cup water
2 Tablespoons cornstarch
2 Tablespoons soy sauce (or try Worcestershire for a different
flavor)
3 cups hot cooked rice
Sprinkle steak with paprika and generous amount of course ground black pepper. Press seasoning into steak. Allow to stand while preparing the other ingredients.
Cook steak and garlic in butter until meat is browned.
Add onions and green peppers.
Continue cooking until vegetables are soft.
Add tomatoes and broth.
Cover and simmer about 15 minutes.
Meanwhile, blend water with cornstarch and soy sauce.
Stir into steak and vegetables and cook until thickened.
Serve over rice.
