Parmesan Topped Baked Salmon

Simple and elegant – you deserve a break today!
4 skinless salmon filets (apprx. 4 oz. each)
¼ cup mayonnaise
2 Tablespoons grated Parmesan cheese
1/8 teaspoon ground red pepper flakes
2 teaspoons lemon juice
½ cup bread crumbs
Preheat oven to 400 F.
Mix mayonnaise, Parmesan, and red pepper
Put salmon filets on a foiled lined sheet
Drizzle with lemon juice
Spread Parmesan mixture evenly over the tops
Sprinkle with bread crumbs
Bake for 12 – 15 minutes, or until salmon is opaque and flakes easily with a fork.
Great served with a heaping salad with an Italian vinaigrette and a glass of white wine or some sort of blush.
Also works with any white fish.
