Papaya Relish

Papaya salsa

 

1/2 cup Red Onion — Chopped

1/2 cup Red Bell Pepper — Chopped

1 small Red Chile – seeded and finely chopped

1 Tablespoon Oil

1/4 cup Fresh Mint Leaves — Snipped

2 Tablespoons Lime Juice

1 Papaya – seeded and cut into ½ inch cubes

 

Cook onion, bell pepper and chile in oil over medium heat, stirring frequently, until tender.

Remove from heat.

Stir in remaining ingredients.

Cover and refrigerate until chilled, about 2 hours.

Makes 3 cups of relish.
