I came from a pretty simple southern family. Our Christmas dinner was nothing spectacular by today’s standards, but we liked it. A great holiday meal doesn’t have to be an extravagant event.
Read more: Our Favorite Christmas FoodsEver since I was a kid, we had ham for Christmas. Ham is pretty easy. Then, the ham bone was used to make navy bean soup. Now I make split pea soup.
We had the sweet potatoes with marshmallow topping.
We had canned cranberries. Now I make fresh cranberries.
We had green beans that were cooked to death in bacon grease. Now I make fresh green beans and garnish with some slivered almonds.
The rest of the meal must have been pretty unremarkable – I don’t remember what else we had for dinner. Oh, canned corn and some brown and serve rolls.
Later in life I added glazed carrots.
For dessert, my grandmother made a lemon meringue pie that is to die for! Its nothing like you’ve ever had.
I haven’t strayed much from the original Christmas dinner. I don’t want to spend days cooking. I keep it simple. You can find my limited Holiday Recipes here –
My family didn’t bake much. We didn’t do the whole cookie thing. I did start when I moved out on my own. I would spend days baking cookies.
