Onion Vinaigrette

1 cup vinegar (I prefer rice vinegar – its smoother with not as sharp a bite)

½ cup olive oil

½ cup pure cane sugar

¼ cup finely chopped onion**

½ teaspoon salt

¼ teaspoon paprika

¼ teaspoon ground mustard

Fresh ground black pepper to taste

 

Put all ingredients in a jar with a tight fitting lid.

Shake well.

Store leftovers in refrigerator.

Makes 2 ½ cups.

 

** What type of onion should you use?

Green onion will give you more kick.

Red will give a little heat and a little sweet

Videlia will give you a sweeter flavor

Yellow or Spanish will give you more of a traditional onion flavor
