Old Fashioned Potato Salad

Another old recipe. My grandmother used to make this. The secret is adding the potatoes warm.

6 medium red potatoes, peeled and cubed

1 cup mayo

2 teaspoons sweet pickle relish

¼ teaspoon salt

¼ teaspoon pepper

¼ cup chopped carrot

¼ cup chopped celery

¼ cup chopped red onion

¼ cup cooked, crumbled bacon

4-5 thinly sliced radishes

2 hard cooked eggs

¼ teaspoon paprika

Cook potatoes in boiling salted water for 10 – 15 minutes until just tender (not too soft.)

Meanwhile, combine mayo, relish, salt and peppers.

Add carrots, celery, onions, radish, bacon, and eggs.

Drain potatoes, and gently mix into mayo mixture.

Cover and refrigerate until serving.

Sprinkle paprika before serving

Makes 4 servings

Confession – I personally don’t like the carrots in this, so I omit them.
