Even people who say they don’t like oatmeal cookies will eat them up if you just add some chocolate chips 😉
1 cup butter, softened
1 cup brown sugar, packed
½ cup sugar
2 large eggs
1 teaspoon vanilla
3 cups old fashioned oats
1½ cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
1 cup raisins
½ cup chocolate chips (optional)
Preheat oven to 350 F.
Beat butter and sugar until light and fluffy.
Add eggs and vanilla and mix well.
In another bowl, flour, baking soda and salt.
Add flour to butter mix in 3 batches, mixing well after each addition.
Stir in oats, raisins and chocolate chips. Mix well.
Drop by teaspoonfuls onto ungreased cookie sheets
Bake for 10-12 minutes or until golden brown.
Cool for 1 minute, then remove to wire racks.
Makes about 4 dozen cookies.
To make bar cookies –
Put batter in an ungreased 13×9 baking pan.
Bake 30-35 minutes.
Variation –
You can use 1/2 cup butter and 1/2 cup creamy peanut butter. That’s yummy too!
