Mini Chocolate Soufflés


You know how sometimes you just want a little something sweet? These Mini Chocolate Soufflés are just the ticket!


Mini Chocolate Soufflés 

4 oz. semi-sweet chocolate, chopped

1/2 cup whipping cream

4 egg whites

2 Tablespoons sugar


Preheat oven to 400F. Coat insides and rims of four 6 oz. ramekins with nonstick cooking spray. Set ramekins on baking sheet. 

In a small microwave-safe bowl, combine chocolate and cream. Cook on high for 1 1/2 – 2 minutes, until smooth, stirring twice. Divide in half. Cover and set aside to cool. 

In a medium mixing bowl, beat egg whites with an electric mixer on medium speed, until foamy. Gradually add sugar, beating until soft peaks form.

Gently fold half of the cool chocolate mixture into the beaten egg whites until combined.  

Spoon mixture into ramekins.  

Bake for 12 – 15 minutes or until a knife inserted near the center comes out clean.

Use a spoon or knife to split open the center of each soufflé and pour in remaining chocolate mixture- dividing equally.

Serve immediately.
