Meatloaves are not an exact science. You can get creative. There is not a way to make meatloaves in under 30 minutes, but we can get closer to 45 minutes. Sometimes I get a taste for meatloaf. Don’t you?

Basic –

2 lb. Lean ground beef

2 egg

1/2 cup chopped onion

Sprinkle with bread crumbs – probably about ½ cup

Sprinkle with garlic powder – 1 or 2 teaspoons according to taste

Mix it up using clean hands.

Form into a loaf.

Spread a layer of ketchup on the top.

Bake for an hour at 350 F.

Let stand 10 minutes before attempting to cut.

To cut cooking time in half – bake individual mini meat loaves using muffin pans. That still puts us over our 30 minute limit. You can premake the meatloaves and let them come to room temperature while the oven preheats.

If you like to serve yours with gravy, you probably want to skip the ketchup topping. You might like to add a little steak sauce.

If you want a more Italian flavor, add a sprinkling of Italian seasoning before mixing. You can also add a layer of grated mozzarella cheese to the top during the last few minutes of cooking.

If you want a Mexican flavor, use chili powder instead. If you want to add cheese, use grated cheddar, or a mexican blend.

You can use barbecue sauce instead of ketchup.
