The tradition is to make these on Christmas Eve so they are there to greet you Christmas morning. But I think we could use some magic more often than that!
2 egg whites
2/3 cup sugar
1 cup chocolate chips
up to 1 cup chopped pecans or walnuts (optional)
dash salt
Preheat oven to 350 (F).
Beat egg white until thick and foamy. Add sugar gradually and beat until stiff. I use a metal bowl. I put the bowl and the beaters in the freezer for 10 minutes while I get everything else ready.
Stir in chips, nuts and salt.
Drop from a teaspoon onto a foil lined cookie sheet, so they resemble tiny snow covered mountains.
Place the cookies in the preheated oven, and turn the oven off.
Leave them in the oven with the door closed until the next morning.
