Italian Grilled Potatoes

These grilled potatoes are sooooo good, browned on the outside, soft on the inside – but not a convenient dish for a big crowd. They take a lot of room on the grill.

Par boil potatoes whole with skin on – until they are about half done. Let them cool a bit.

Cut into wedges. 

Coat with Italian dressing. 

Cook on upper rack of grill, or outer edges until golden brown outside, and soft inside, turning once. Takes about 20 minutes. (You can also do them in a 350 degree oven for 30 – 40 minutes.)
