Guacamole – Mexican


1 large ripe tomato, about 1 cup chopped

1 small yellow onion, about ½ cup diced

1 jalapeno pepper

3 stems cilantro

3 medium sized, ripe avocados

Wash and finely chop tomato, place it and juices in medium bowl.

Peel and finely chop onion. Put into bowl.

Rinse and dry cilantro. Remove leaves from stems. Finely chop leaves and add to bowl.

Seed and finely chop jalapeno. Add to bowl. If you like hotter, add seeds.

Wash avocado. Cut in half. Remove pit. Scoop out meat. Place in a separate bowl to mash. Mash until fairly smooth.

Add avocado mash to the other bowl. Mix well. Salt to taste.

Serve immediately.

Makes 2¼ cups.
