One of my grandfather’s favorite BBQ’s when he came to my house was really easy and not real expensive. And boy, he would eat it up-
And so would everyone else!
The day before –
Buy Chuck steaks. Figure about ½ pound per person.
Sprinkle each side generously with garlic powder. (garlic powder is tenderizing)
Let them soak in a good Italian dressing overnight.
To cook-
Prepare a hot grill.
While grill is heating, take steaks out and let them start warming to room temperature.
Cook on very hot grill, (covered because there will be flare ups!) 5 to 7 minutes per side for medium.
Serve with your choice of the following –
tossed salad, coleslaw, baked beans, potato salad, grilled potatoes, grilled vegetables, fresh fruit, fruit salad¦.
To make the grilled potatoes, par boil potatoes until they are about half done.
Cut into wedges.
Coat with Italian dressing.
Cook on upper rack of grill, or outer edges until golden brown outside, and soft inside. Takes about 20 minutes.
The potatoes are very, very good, but not a convenient dish for a big crowd.
