Fried Bananas

You’re probably too young to remember the days when fancy desserts were the rage – Cherries Jubilee, Baked Alaska, Banana Flambe… if you don’t know what I’m talking about, you’ve missed some good eating!  

While I love Banana Flambe at a restaurant, I really am a wimp when it comes to trying flaming things in my own kitchen.  While this recipe isn’t flaming, it is a really decadent banana topping for french toast, pound cake, or creamy vanilla ice cream. And it easy enough that anyone could make it for a special treat for Mom.

 

1/4 cup butter

4 medium ripe bananas, peeled and sliced

1/2 cup firmly packed brown sugar

1/2 cup maple syrup (pure is best)

1/2 teaspoon ground cinnamon

1/2 cup whipped cream

 

Melt butter in large skillet over medium-high heat. Add sliced bananas, brown sugar, maple syrup and cinnamon. Saute for 5 minutes, stirring to make sure sugar is completely dissolved. 

Serve immediately over french toast, pound cake, or ice cream. Top with dollop of whipped cream.  

Serves 6. Halve recipe if it’s just 2 or 3 of you.
