This can be sauteed in a pan, or cooked on a grill. Its a super fast, light dinner.
1 tablespoon olive oil, plus more for grates if grilling
1 garlic clove
1/4 cup fresh lemon juice, plus lemon wedges, for serving
Salt and ground pepper
4 small or 2 large boneless, skinless chicken breasts
If grilling – lightly oil grates and heat grill to high.
Mince 1 garlic clove, and place in a shallow dish.
Add lemon juice and 1 tablespoon oil;
Season with salt and pepper.
Add chicken, and toss to coat.
Let stand at room temperature at least 5 minutes (and up to 30).
Saute or Grill chicken until cooked through, 3 to 4 minutes per side.
Serve with buttered noodles, steamed broccoli and lemon wedges.
