Easy French Onion Soup

3 cups fresh onion cut into rings

2 Tablespoons buttermilk **

2 -10.5 oz. cans condensed beef broth

2 ½ cups cold water

Dash fresh ground black pepper

6 slices of French Bread toasted

1 -8 oz. package swiss cheese slices

Grated Parmesan cheese

Optional – chopped green onion tops for garnish

 

Saute onions in butter in a large saucepan until tender – about 10 minutes.

Add broth, water, and pepper.

Cover, lower heat and simmer for 15 minutes.

Pour soup into 6 -8oz. oven proof bowls.

Place a slice of toasted bread on each.

Sprinkle with Parmesan cheese.

Cover each bowl with cheese slices.

Place bowls on a sturdy cookie sheet or jelly roll pan.

Broil 2-3 minutes or until cheese is melted and golden brown.

Serve immediately.

 

** You can make your own buttermilk. Simply put 1 Tablespoon white vinegar or lemon juice in a one cup measuring cup. Fill to one cup with milk and let stand for 5 minutes.

You can freeze the remainder. If you like to have small portions on hand for recipes like this, simply measure 2 tablespoons and place into ice cube trays. When frozen, remove to a covered container or freezer bag.
