Crock Pot Beef Stew



1 ½ lbs. stew meat

1 medium yellow onion, cut into 1 inch pieces

4 medium carrots cut into ½ inch slices

2 ribs celery, cut into ½ inch slices

4 medium potatoes cut into on inch cubes

1 28-oz. can whole tomatoes with juice

1 10 ½ -oz can beef broth

1 Tablespoon Worcestershire sauce

2 tablespoons parsley flakes

1 bay leaf

½ teaspoon black pepper

2 Tablespoons quick cooking tapioca

(the tapioca is the secret ingredient for making the gravy thicken)


Brown meat cubes on all sides. Transfer to crockpot.

Add remaining ingredients. Stir to blend.

Cover and Cook on low for 9-10 hours

Medium for 8 hours

High for 4-5 hours
