Creamed Spinach



2 -10 oz. packages of spinach, either fresh or frozen – large stems removed and chopped

½ cup chopped onion

2 – 3 cloves garlic, minced

2 Tablespoons butter

1 cup whipping cream

½ teaspoon fresh ground black pepper

¼ teaspoon salt

¼ teaspoon ground nutmeg


If using fresh spinach, place in already boiling salt water for one minute. Drain and dry with paper towels.

If using frozen, drain well and squeeze out any excess liquid.

In a large skillet, cook garlic in butter for about 5 minutes.

Stir in cream and seasonings.

Bring to a boil

Cook, stirring constantly until cream starts to thicken.

Add spinach and simmer for 2 minutes.

Adjust seasonings and serve.
